Lately I have been pretty decent about the whole meal planning thing. Sure we tend to eat the same or similar types of food week in and week out, but I try to change it up here and there so it doesn’t get too boring.
Last night, however, I was just feeling really tired and totally forgot about dinner. All of a sudden, my husband sent me an IM saying he was on his way home and I looked at the clock. Whoah it’s 6pm!? Now what?
I completely forgot to thaw any meat and had nothing planned…time to improvise!
It’s amazing what lurks in my fridge sometimes. It can be scary, but last night it worked out.
I gathered my ingredients.
- Yellow Squash
- Minced Garlic
- Olive oil
- Sweet peppers
- Cold (day old) pasta
- White cheddar cheese
- Frozen veggie burgers
I am sure you can see where I am going with this. I sauteed the veggies right up and salted/spiced them up. Then I dumped in the pasta and finally added the tomatoes and cheese at the end. Topped the whole thing off with chopped up black bean burgers and voila! Dinner! The whole thing took about 12 minutes and it was really tasty! We ate it warm, but it would be really good cold too (with some olives!)
How bout that.
