Meal Planning Monday!

I don’t have a picture this week. Why’s that you ask? Because we were so hungry that I forgot to take one! But I guarantee it was delicious.

Last week I made Balsamic Chicken. If you like Bruschetta then you will love this! And it’s so easy and flexible. Serve over pasta, or with cous cous or whatever. We had potatoes to use up and some corn on the cob and it was great!

You will need:

2 chicken breasts
1 tomato


2 tbsp Olive Oil
2 Tbsp Balsamic Vinegar
1 clove garlic (or 1T minced)
Fresh basil (chopped)
Salt and Pepper to taste

You can either marinate the chicken before hand and remove from liquid to cook or let it cook in the juices. I did the latter and it worked well.

Bake on 400 for about 10 minutes on each side. Once chicken is cooked through, add the tomato slices to the top of the chicken and put on the top rack. Mozzarella can be added a few minutes later. Once the cheese is melted, you are done! Enjoy 🙂 We did!
