Easy Mexican Pie Recipe (Chili Pie Casserole!)

For a delicious home-cooked dinner that will warm you up from head to toe, look no further than this Mexican pie recipe.

It’s easy to make, hearty, and kid-approved! If you love taco casseroles, you need this in your life.

One of my favorite meals to make for taco night is delicious chili pie, or as it was called when I was growing up, Mexican pie.

However you say it, this is the delicious dinner you want on a cold night. It makes the perfect comfort food.

I first had chili pie as a child when one of our church members would bring it to potluck dinners. I loved it so much that when I moved into my own place I asked for the recipe.

This classic recipe has become a family favorite and so easy to make.

Easy Mexican Pie Ingredients

This is a great as a make-ahead meal, quick and easy recipe for a weeknight or perfect for game day. You just need a large skillet to brown ground beef and a 9×13 pan for baking.

Ingredients you will need:

  • Ground beef
  • Cheddar cheese
  • Egg
  • Milk
  • Onion
  • Corn bread mix (I use Jiffy)
  • Chili beans or black beans (I have used both and prefer chili beans)
  • Chili-O seasoning (or taco seasoning mix)

Mexican chili pie is big enough to share so bring it to a church potluck dinner or to a family with a new baby.

For my fellow Mexican food lovers, this is a great recipe for when you want to switch it up on taco Tuesday!

How to make Mexican Pie

Start by heating a burner to medium-high heat and add ground beef and onions.

Do you love that smell as much as I do? It means good things are in store!

While your meat is cooking, heat oven and prepare your corn bread.

I love one-pan meals and this one is especially easy because you can mix up the corn bread right in the pan you bake in. Combine the corn bread mixture with the egg and milk in the bottom of a 9×13 baking dish.

Add the seasoning and beans to your beef and combine.

Then, pour the beef and bean mixture over the uncooked cornbread, top with cheese and bake!

The combination of cornbread, the beef mixture, and chili seasoning cooking is enough to make your mouth water. 

Prep Your Chili Pie Toppings

While the pie is in the oven, chop up whatever toppings you like.

We think of this meal as baked chili so really, whatever you like on chili or your favorite taco toppings work great!

I love adding fresh ingredients to mine. They really boost the flavor!

Optional toppings:

  • Avocado or guacamole
  • Sour cream
  • Green onions
  • Tomatoes
  • Green chiles
  • Cilantro
  • Black olives
  • Sriracha (or your favorite hot sauces)

This Mexican casserole is one of those easy dinners that tastes just as good reheated. In fact, sometimes I like it even more the second day.

Mexican Chili Pie Recipe

This chili pie is comfort food at it's finest. Full of cheese, meat, beans and delicious corn bread, it's perfect for fall and kid-approved!
Prep: 10 minutes
Cook: 30 minutes
Total: 45 minutes
Yield: 8

Ingredients 

  • 1 Box Jiffy Corn Bread Mix
  • 1 Egg
  • 1/3 C Milk
  • 1 lb Ground Beef
  • 1/2 Onion
  • 2 Cans Chili Beans, drained not rinsed
  • 1 pkg Chili-O Seasoning Mix, or similar
  • 2 Cups Shredded Cheddar Cheese
  • Optional toppings:
  • Sour Cream
  • Tomatoes
  • Green Onions
  • Avocados
  • Black olives

Instructions 

  • 1. In the bottom of a 9×12 pan, stir together corn bread mix, egg and milk and set aside.
  • 2. Brown the meat and onion
  • 3. Stir beans and seasoning mix into cooked meat
  • 4. Pour mixture over uncooked cornbread mix
  • 5. Top with cheese
  • 6. Bake for 30 minutes on 350 degrees
  • 7. Garnish with your favorite toppings (sour cream, avocados, green onions, tomatoes).

Notes

This meal is great for make-ahead meals and leftovers!
