Make a batch of rainbow Fruity Pebbles treats for a fun St. Patrick's Day snack. A twist on the classic marshmallow crispy treat is both colorful and tasty!
Begin with a 9x9 inch baking dish. Grease the pan or line with parchment paper and set aside. If you want a thinner bar, feel free to use a 9x13 pan instead.
Melt butter in a large pot over medium heat.
Add mini marshmallows to the melted butter and stir until completely melted. If you want to add a teaspoon of vanilla, go ahead and mix it in here.
In a large mixing bowl, pour melted marshmallow mixture over cereal & mix until well coated. I like to use a buttered spatula or spray my hands with a little non-stick spray to make this process easier.
Press cereal mixture into prepared pan in an even layer, again using coated hands or wax paper to keep it from sticking.
Top your cereal bars with dried cereal marshmallows and some green and gold sprinkles. Press lightly so they stick to the melted marshmallows.
Cover with plastic wrap and allow to cool completely before slicing.
Cut into 6 equal pieces and serve.
