Strawberry crunch cookie balls are a delicious and easy-to-make treat that is perfect for any occasion. With just a few simple ingredients, you can create a sweet and crunchy snack that will satisfy your cravings.
Get started with two baking sheets line with parchment paper. Set aside for later.
Crush the Golden Oreo cookies until you have fine crumbs with a food processor. Set aside ½ cup of the crumbs for later to use as a topping.
Then, take a large mixing bowl and use an electric mixer to beat the softened cream cheese until smooth.
Add the cookie crumbs and 1 cup of the freeze dried strawberries to the bowl. Mix on a low speed until evenly combined and you get a dough consistency.
Place the bowl in the refrigerator to chill for about 30 minutes to firm up the batter a bit, which will make it easier to roll into balls.
Once chilled, use a 1 ½ tablespoon cookie scoop to scoop the batter into even sizes and roll them into balls with your hands.
Place each ball onto the lined baking sheet and chill again in the refrigerator for another 30 minutes.
Using a double boiler or microwave, heat the melting wafers over low heat, stirring often, until fully melted.
Place a cookie ball onto a fork and dip it into the melted candy. Tap the fork against the edge to remove the excess coating.
Place back onto the baking sheet and top immediately with the cookie crumbs and some freeze dried strawberries.
Repeat with the remaining cookie balls and place back in the refrigerator to fully set before serving.
