Cajun Cod Fish Tacos

Ingredients

lbs
Boneless Skinless Cod
fresh or frozen
1
can Corn
1
can Black Beans
1
package Corn Tortillas
Olive oil
Cajun Spice
Garlic Powder
Salt
2
Limes
Cilantro
Plain Greek Yogurt
Onion
optional
Instructions
Season cod with olive oil and spices
Bake at 400°F for 12-15 minutes or until done (140°F using meat thermometer)
Rinse and drain corn and beans
Cook corn in a pan with a little oil and juice from one lime and onion if desired
Add beans to corn and turn heat to low
Spray PAM on electric skillet and fry tortillas for about 1 minute each side
Layer corn mixture and fish on tortillas and top with lime juice, greek yogurt and cilantro
Enjoy!
Notes
Enjoy right away. Store leftovers separately and refrigerate for 1-2 days.
