July 4th Poke Cake Cupcakes
Poke cake cupcakes are so easy to make and so fun for a July celebration. Use your favorite vanilla cupcake recipe or keep it simple with a box of cake mix!

Ingredients
1
Box white cake mix
prepared as cupcakes
3
Eggs
1/3
Cup
Vegetable Oil
1
package Strawberry Jell-o
1
package Berry Blue Jell-o
2
cups
boiling water
2
containers white frosting
Red
white, and blue sprinkles
Red and Blue Gel food coloring
optional
Instructions
Bake cupcakes according to the directions on the box.
Allow the cupcakes to cool completely, then use a straw to poke holes in each cupcake.
Combine each of the gelatin flavors with one cup of boiling water and stir until the gelatin is dissolved.
Allow the gelatin cool, then use a spoon to pour each color into the holes on the cake, alternating the colors to create stripes.
Place the cupcakes in the refrigerator to chill for one hour, then top with icing and sprinkles before serving.
