First, set your Instant Pot to sauté mode and add in the vegetable oil.
Once hot, add in your onions and sauté for about three minutes until they are translucent and softened.
Then, mix in the ground beef and brown. Stir in taco seasoning.
Finally, add in your remaining ingredients: garlic salt, salt and pepper, corn, black beans, tomatoes, and chicken broth and give it a good stir.
Place the lid on your Instant Pot, and lock it into position. Close the sealing valve by pushing it away from you and use the high pressure setting for six minutes.
Once the timer is done, do a quick pressure release by bringing the valve closer to you and releasing steam. The silver pin in the lid will drop when the pressure is released.
Be sure the pressure is released completely and twist open the lid.
Stir the taco soup again and transfer to your favorite soup bowl.
Add your favorite toppings and enjoy!
Notes
For a spicy soup, add a tsp of red pepper flakes or a small can of green chiles. This soup can also be made on the stove or in a crock pot. Simply brown your meat and onions together, then add the other ingredients and simmer or heat in crock pot until done. See above post for variations and topping ideas.
