These watermelon Rice Krispie treats use the classic recipe with some added fun. Top them off with delicious mini chocolate chips for one incredible dessert!
Green gel food coloringwe used a mix of neon green and regular green
Red & pink gel food coloring
1tbspMiniature chocolate chips
Instructions
Spray a 10 inch cake pan or a 10 inch springform pan with non-stick spray. Set aside.
In a large pot, melt 1 tbsp. of butter.
Add 2 cups miniature marshmallows and continue cooking, stirring constantly, until marshmallows have melted.
Add in several drops of green gel food coloring and 1-2 drops of neon green, and stir to incorporate into the melted marshmallows, until there are no streaks.
Remove from the heat and stir in 2 cups rice krispie cereal.
Drop the green rice krispie mixture by large spoonfuls around the outside of the prepared pan.
Use a piece of parchment paper over your hands, or grease your hands with non-stick spray and press the green mixture evenly around the edge of the pan. This will make about a 1 ½ inch ring pressed up against the sides.
In another large pot, heat 2 tbsp. of butter, until melted.
Add in 4 cups miniature marshmallows, and heat, stirring constantly, until melted.
Add several drops of red food coloring and 1-2 drops of pink, and stir to incorporate, until there are no streaks.
Remove from the heat and stir in 4 cups of rice krispie cereal.
Press the red rice krispie mixture into the middle of the green ring you made before, making sure to smooth out evenly and press the mixture up against the green ring so they come together.
Allow the rice krispie mixture to cool completely and set.
Before serving, press miniature chocolate chips into the red krispie section to look like little watermelon seeds.
Cut into slices & enjoy!
