This easy ground beef skillet recipe is loaded with veggies and a splash of Greek flavor. It's the perfect weeknight dinner that's done in 30 minutes or less!
1small red onionpeeled and diced (or ½ large red onion)
½cupcherry tomatoessliced in half
2garlic clovesminced
1poundlean ground beef
2cupsbaby spinach
½cupkalamata olivespitted and sliced in half
1tablespoonfresh herbsparsley and dill, chopped
½teaspoonKosher salt
¼cupGreek dressing

Instructions
Heat olive oil in a large skillet over medium-high heat.
Add the bell peppers, zucchini, red onion, and cherry tomatoes. Saute for 4 to 5 minutes.
Add the garlic and stir until fragrant, about 1 minute. Remove the vegetables to a plate.
Add the ground beef to the same skillet and cook until the beef is browned, about 7 to 10 minutes. Drain the excess grease.
Transfer the vegetables back to the skillet with the ground beef.
Add the spinach, kalamata olives, fresh herbs, salt, and Greek dressing. Stir for 2 to 3 minutes, or until the spinach has wilted.
Garnish with crumbled feta before serving.
Notes
Ground chicken, Italian sausage, and turkey are great alternatives to ground beef.Feel free to use any color bell pepper you have.Add a dollop of hummus as a tasty topping or serve with flatbread or pita. Refrigerate leftovers in an airtight container for 2-3 days.
