Leftover Turkey Eggrolls

Ingredients

cup
leftover turkey
chopped
1
cup
stuffing
1
cup
mashed potatoes
1
egg

egg roll wrappers
1
cup
Cranberry sauce for dipping
Instructions
In a bowl, gently combine the turkey, stuffing, and potatoes.
Place two heaping tablespoons of mixture onto the center of an egg roll wrapper.
Brush whisked egg on the edges of the wrapper and fold the left and right corners overlapping one another.
Fold the bottom corner up to begin to close the egg roll.
Roll the top corner down enclosing the egg roll.
Spray rolls with non-stick spray.
Lay eggrolls in an air fryer basket and cook on 375°F for 10 minutes on one side.
Turn rolls and spray again. Then cook for 3 more minutes on the other side.
Remove and let cool before eating.
Serve with cranberry sauce for dipping and enjoy!
Notes
Best if eaten right away. Reheat in the air fryer as needed.
Feel free to use whatever leftovers you have to great a delicious meal or snack!
