This 4 ingredient chicken salad can be made in minutes and it's so delicious! Sometimes simple is better. Serve on a croissant, with crackers, or all alone, and enjoy!
Remove chicken breasts from rotisserie chicken and discard skin. Shred chicken and add it to a medium sized mixing bowl.
Chop grapes and dill and stir in with the chicken
Add mayo to the bowl and mix until well combined. Season with salt and pepper.
You can eat immediately or refrigerate until ready to eat. Serve on croissants and enjoy!

Optional: Add 1/8 to 1/4 c diced red onion to taste for a burst of flavor. The chicken salad gets better with time. I recommend letting it chill for an hour or two before eating. Cover and refrigerate for up to 3 days.
