I love a good chicken salad sandwich, and this 4 ingredient chicken salad makes the perfect weekday lunch. Make it in 10 minutes and enjoy right away, or let it chill to allow the flavors to combine. The choice is yours.

I love to make a batch at the beginning of the week and use it for lunches each day. I work from home but if you need some lunch ideas to take to work, this would be great.

How to Make 4 Ingredient Chicken Salad

There are plenty of extras you can add to this chicken salad, depending on your tastes. That said, to make a delicious chicken salad sandwich, you only need to have four.

Step 1: Remove the chicken breast from the rotisserie chicken. Shred the chicken and add it to a bowl.

Step 2: Roughly chop grapes and dill and add them to the chicken.

Step 3: Add mayonnaise and stir until well combined—season with salt and pepper to taste.

Step 4: Cover the bowl and chill the chicken salad mixture in the refrigerator for about an hour if you have time.

This 4 ingredient chicken salad can be made in minutes and it's so delicious! Sometimes simple is better. Serve on a croissant, with crackers, or all alone, and enjoy!
Prep: 10 minutes
Total: 1 hour 10 minutes
Yield: 6 servings

Ingredients 

  • 2 rotisserie chicken breasts, shredded
  • 3/4 cup mayonnaise: I like Duke’s
  • 1 1/2 cups red grapes, chopped
  • 2 tbsp dill, chopped
  • Salt & pepper to taste

Instructions 

  • Remove chicken breasts from rotisserie chicken and discard skin. Shred chicken and add it to a medium sized mixing bowl.
  • Chop grapes and dill and stir in with the chicken
  • Add mayo to the bowl and mix until well combined. Season with salt and pepper.
  • You can eat immediately or refrigerate until ready to eat. Serve on croissants and enjoy!

Optional: Add 1/8 to 1/4 c diced red onion to taste for a burst of flavor. 
The chicken salad gets better with time. I recommend letting it chill for an hour or two before eating.
