Easy Brownie Bite Gnomes

If you love our Santa Gnome cookies, these brownie bite gnomes are going to be a hit! This easy no-bake recipe takes minutes to prepare and the results make the cutest addition to your holiday dessert table.

Chocolate lovers rejoice! Gnome brownie bites are here to stay. You can whip up a batch of these delicious treats in no time.

Ingredients Needed

What to Buy

  • Brownie bites – you can make your own or grab a pack from the bakery.
  • White Icing – Vanilla frosting is the whitest if you want a pure white beard. Cream cheese frosting also works but won’t be as bright. You can also make your own stabilized whipped cream if you prefer.
  • Fresh Strawberries – Make sure they aren’t bigger than your brownie bites so they aren’t too heavy.
  • Red candies – Skittles or M&Ms work well.

How to Make Gnome Brownie Bites

First, open and arrange your brownie bites on a cutting board or wire rack and set aside.

Our happy gnome cookies have hats made from fresh strawberries and the flavor combination is so good!

Wash and Slice Strawberries

Wash your strawberries and cut out the crowns in a v shape.

This creates a hat shape in the strawberry when turned upside down.

Recipe Tip

If you want to make it ahead of time, you can simply pop off the green stem on the strawberries. This will cut down on weeping when they come in contact with the sugar in the icing. Or wait until just before serving to add the strawberry hats.

Add Icing and Strawberry Hats

Take a brownie bite and pipe frosting on top of the brownie. You want to be a little generous here.

Using a toothpick to spread some of the icing down one side to create the white beard.

Then push a strawberry on top of the icing and add a red candy nose just under the strawberry and on top of the beard.

I find that if you push the candy in from the front, it sticks better to the strawberry.

These adorable no bake brownie gnomes can be enjoyed year-round though I am partial to the holidays with my other favorite Christmas cookies.

Brownie Bite Gnomes

Four ingredient no-bake gnome brownie bites are as cute as they are delicious! A perfect dessert for your Christmas cookie exchange, holiday party, or whenever you want a treat.
Prep: 15 minutes
Total: 30 minutes
Yield: 12 brownie gnomes

Ingredients 

  • 12 Brownie Bites, from the bakery section in the grocery store
  • 16 oz White Frosting
  • 12 Strawberries
  • 12 Skittles, or M&Ms (red or pink)

Instructions 

  • Place brownie bites on a cutting board or wire rack and set aside.
  • Wash strawberries and cut out the crowns in a v shape.
  • Take a brownie and pipe frosting onto the top. You want to be a little generous here.
  • Take a toothpick to spread some of the icing down one side to create a white beard.
  • Push a strawberry on top of the icing and add a red candy nose just under the strawberry.
  • Enjoy right away or refrigerate until ready to serve.

Notes

  • The cute little gnomes are best enjoyed immediately, but leftovers can be stored in the fridge for up to 2 days. The red from the candies and strawberry juice will begin to drip into the frosting after a while.
  • I’m using store-bought brownie bites from the Walmart bakery section. There are usually 15-18 brownie bites per container. 
  • If you have trouble frosting the brownie bites, use a piping bag with a tip and pipe the frosting on top of the brownies and down the side. If you press too hard with a butter knife, brownie pieces can end up in the frosting.
  • Purchase strawberries that are similar in size to the brownie bites. If the strawberries are too wide, they won’t fit on top of the brownies.
  • If you can’t find pink or red Skittles, you can use M&Ms or round-shaped cereal puffs for the nose.
