Instant Pot Taco Soup

This Instant Pot taco soup recipe checks all the boxes for a hearty weeknight dinner. Not only are Instant Pot recipes easy to make, they are also easy to clean up since you are using one pot from start to finish.
We love soup, especially during the cooler months so the more the merrier!
Taco soup is full of flavor and takes under 30 minutes to make for a dinner the whole family will love.

Try this easy instant pot soup recipe as a taco Tuesday alternative or when you need something quick on those busy weeknights we all deal with from time to time.
If you don’t already have these ingredients on hand, add the following to your shopping cart.
Shopping List:
- Vegetable oil
- Onion, diced
- Ground Beef
- Taco seasoning
- Garlic salt (or garlic powder)
- Salt
- Pepper
- Corn, canned and drained
- Black beans
- Crushed tomatoes or diced tomatoes
- Green chiles (canned/optional)
- Red pepper flakes (optional)
- Chicken Broth
- Your favorite toppings
And of course you will also need an Instant Pot pressure cooker or similar. Or if you don’t have that, you could simmer this soup on the stove, but the cook time may vary.
How to Make It
First, set your Instant Pot to sauté mode and add in the vegetable oil.
Once hot, add in your onions and sauté for about three minutes until they are translucent and softened.
Then, mix in the ground beef and brown. Stir in taco seasoning.
Finally, add in your remaining ingredients: garlic salt, salt and pepper, corn, black beans, tomatoes, and chicken broth and give it a good stir.
Place the lid on your Instant Pot, and lock it into position. Close the sealing valve by pushing it away from you and use the high pressure setting for six minutes.
Once the timer is done, do a quick pressure release by bringing the valve closer to you and releasing steam. The silver pin in the lid will drop when the pressure is released.
Be sure the pressure is released completely and twist open the lid.
Stir the taco soup again and transfer to your favorite soup bowl.
Serve and enjoy!

Ingredients

- 1 cup canned corn, drained
- 15 oz can of black beans
- 15 oz can diced tomatoes
- 4 cups chicken broth
Instructions
