This delicious baked burrito casserole will be a new mealtime favorite. Enjoy the beefy cheesy goodness and top with sour cream. So good!

I’m back with another simple dinner recipe from my family cookbook!

I love making childhood favorites, like my mom’s lasagna with cottage cheese recipe and this is no different.

If you haven’t guessed it yet, we love our one-pan meals, and this burrito bake is no different.

So grab your iron skillet and let’s get cooking!

Baked Burrito Casserole Ingredients

We’re using lots of basic ingredients for this meal and one pantry staple you may already have.

Ground beef, beans, and cheese make up the bulk of this dish.

Burrito Bake Ingredients

Do you use Bisquick? We love to make pancakes with it so we usually have some on hand.

If you don’t have any, you’ll want to look for the yellow box next time you shop. Or you can make Bisquick from scratch with this easy recipe!

You won’t be sorry!

Beans and bisquick

Start by browning your beef, then mix together the Bisquick, beans and water to form the bottom layer of your dish.

Top with the cooked and drained beef, salsa, and cheese.

Then pop that bad boy in the oven and let the cheese bubble right up!

If you love burritos, you will love this twist on one of your favorites.

Y’all, that’s it. Did I mention this was super quick and easy?

For a few topping ideas, we like sour cream, green onions, avocado, black olives, and/or Sriracha to name a few.

Top with your favorite garnish and enjoy!

Ingredients 

  • 1 Cup Bisquick Baking Mix
  • 1/4 Cup Water
  • 1 16 oz. Can Refried Beans
  • 1 lb. Ground Beef, cooked and drained
  • 1 Cup Thick Salsa
  • 1.5 Cup Shredded Cheddar Cheese

Instructions 

  • Heat Oven to 375°F
  • Cook and drain beef
  • Mix together Bisquick, water, and beans
  • Spread mixture in the bottom of pie plate or iron skillet
  • Layer beef, salsa and top with cheese
  • Bake for 30 minutes
  • Serve with sour cream and/or avocado if desired
