How to Make Lemon Delight
This easy recipe is perfect for springtime fun. Make it for your next brunch, birthday party, or baby shower.
Begin by preheating the oven and adding a layer of parchment paper to a 9×13 baking dish.

Use a fork to combine flour and butter in a large mixing bowl. You should end up with a crumbly mixture.

Press the cookie mixture onto the parchment paper in the pan and bake. Set aside to cool.

Using a hand mixer, blend powdered sugar with cream cheese in a bowl.

Spread the cream cheese layer over the cooled cookie layer.

Make the instant pudding by adding the pudding and milk. Whisk together.

Spread the pudding layer over the cream cheese layer. Cover and chill in the refrigerator for 6 hours to overnight.

When ready to serve, add the Cool Whip layer and top with lemon slices if desired. Enjoy!

Lemon Delight Dessert
Ingredients
- 2 cups all purpose flour
- 1 cup unsalted butter, softened
- 16 oz cream cheese, softened
- 2 cups powdered sugar
- 1 tbsp lemon juice
- 6 oz lemon instant pudding mix, Two 3 oz packages
- 3 cups milk
- 8 oz cool whip
- Fresh lemons for garnish, optional
Instructions
- Line a 9×13 inch pan with parchment, and set aside.
- Preheat your oven to 350 degrees Fahrenheit.
- In a large mixing bowl, add the all purpose flour and butter.
- Use a fork to cut the butter into the flour, mixing until a crumbly dough forms.
- Press this mixture into the bottom of the parchment lined pan.
- Bake for 25 minutes, and allow the crust to cool completely.
- For the cream cheese layer, in a large mixing bowl, mix together the cream cheese and powdered sugar, until smooth.
- Add the lemon juice, and mix again.
- Drop this by large spoonfuls over the crust, and smooth out evenly.
- For the pudding layer, in a large mixing bowl whisk together pudding and milk.
- Pour over the cream cheese layer and smooth out evenly.
- Chill this in the refrigerator for 6 hours, or over night.
- Before serving, top with the final layer of cool whip, smoothing out evenly.
- You can add lemon slices to the top of each piece when serving, if desired.
