These cookie butter Rice Krispie treats are perfect for spring gatherings, Easter brunch, baby showers and school lunches. In fact, I can’t think of a time they wouldn’t be perfect.

It’s similar to basic Rice Krispie treats with the addition of decadent cookie butter added to the gooey marshmallow mixture.

Here’s what you’ll need:

  • 1 stick unsalted butter, melted
  • ⅛ teaspoon salt
  • 16 ounces mini marshmallows, divided
  • ¼ cup cookie butter Biscoff spread (Trader Joe’s cookie butter also works – find it in the peanut butter aisle)
  • 1 teaspoon vanilla extract
  • 7 cups Rice Krispies cereal
  • 8.8 oz package Biscoff cookies
  • 6.34 ounce Biscoff chocolate bar, chopped

Variations

If you don’t have access to Lotus Biscoff cookies, look in the cookie aisle for speculoos cookies or even ginger snaps.

Feel free to use your favorite rice cereal for these treats. Store brand is fine!

You can also add more unmelted marshmallows to the top with a drizzle of melted cookie butter.

Try this recipe using peanut butter or even Nutella instead of Biscoff cookie butter and peanut butter cookies for a fun swap!

For even more chocolate, mix in some white chocolate chips or melt the white chocolate and drizzle it on top.

How to Make Chewy Biscoff Rice Krispie Treats

You will find a detailed printable recipe at the end of this post. Below is a visual walk through of the process to make these easy Rice Krispie treats.

Prepare a 13×9 (or larger) inch baking dish by lining it with parchment paper. Spray the paper with non-stick spray or a little butter.

Place the butter in a large pot and melt over medium heat. Stir in the salt.

You can also do this stage in the microwave if you prefer. Use a large microwave safe bowl and melt in 30 second increments for each step.

Measure out and set aside 1 and a half cups of mini marshmallows to mix in to your cereal treats at the end.

Add the remaining marshmallows to the melted butter and stir until completely melted and it is a smooth consistency.

Take the pot off of the heat and add the Biscoff spread and vanilla extract.

Fold in the Rice Krispies cereal, bits of Biscoff cookies, and chopped Biscoff chocolate bar.

Add the reserved mini marshmallows and fold gently until evenly combined.

Spread the marshmallow mixture into the baking pan with parchment paper into an even layer. It helps to use a rubber spatula to press it in.

Cool your Biscoff Rice Krispies treats to room temperature on the counter for 30 minutes to 1 hour before slicing.

Tips and Tricks

Store leftovers in an airtight container or on a plate covered with plastic wrap. You don’t have to refrigerate these yummy marshmallow treats as it could make them hard and crunchy.

I recommend eating within about 2 days.

You can decorate this quick delicious treat for various holidays using colorful melting chocolate, icing or sprinkles.

You can even add a few chocolate eggs on top for an Easter version.

These Biscoff rice krispie treats will be a new favorite! They are loaded with cookies, cookie butter, and even a Biscoff chocolate bar. Yum!

Equipment

  • Large pot
  • 13×9 baking pan (or larger if you want thinner bars)
  • Parchment Paper
  • Nonstick cooking spray

Ingredients 

  • 1/2 cup unsalted butter, melted (one stick)
  • teaspoon salt
  • 16 ounces mini marshmallows, divided
  • ¼ cup Biscoff cookie butter
  • 1 teaspoon pure vanilla extract
  • 7 cups Rice Krispies cereal
  • 8.8 oz package Biscoff cookies
  • 6.34 ounce Biscoff chocolate bar, chopped

Instructions 

  • Line a 13×9 baking pan with parchment paper and lightly grease with cooking spray. Set aside.
  • Melt butter in a large pot and stir in salt.
  • Measure and set aside 1 ½ cups of marshmallows. Add the remaining marshmallows to the pot to the melted butter and stir until it is a smooth consistency.
  • Take the pot off of the heat and mix in Biscoff spread and vanilla extract.
  • Gently fold in crispy cereal, chopped Biscoff cookies, and chopped Biscoff chocolate bar.
  • Add the reserved marshmallows and fold gently until evenly combined.
  • Spread the marshmallow cereal mixture into the baking pan into an even layer. It helps to use a rubber spatula to press it in.
  • Cool on the counter for 30 minutes to 1 hour before slicing and enjoy!

Notes

These treats are best eaten the same day but you can store leftovers in an airtight container on the counter for up to 2 days. For best results, do not refrigerate.
