In this house, you can’t go wrong with marshmallows. We love Rice Krispies treats in a wide variety, like Oreo treats, strawberry squares, and even Biscoff crispy treats. But why should one cereal get all the love?

How to Make Lucky Charms Cereal Bars

This easy recipe is really fun to make with kids, and most of the time is spent waiting for the chocolate to set! Throw it in a lunchbox with a fun St. Patrick’s Day lunchbox note to make your little one smile.

Step 2: Stir in cereal and mix until well coated.

A rectangular baking dish lined with parchment paper holds a mixture of cereal pieces and colorful marshmallow shapes, spread evenly.

Step 3: Press cereal mixture into wax paper-coated pan and let set.

A hand dips a square marshmallow cereal treat into a bowl of white melted chocolate, with more treats on parchment in the background.

Step 4: Slice into bars and dip in melted white chocolate or almond bark. Allow to dry on wax paper.

Recipe Tips

This is a sticky recipe. I like to spray my utensils and hands with cooking spray while working the cereal mixture. You can also use wax paper to press the cereal into the pan. Enjoy!

These Lucky Charms cereal bars make the perfect snack for St. Patrick's Day. Make them with your kiddos or sneak one into a lunchbox for a sweet surprise.
Prep: 15 minutes
Yield: 20 bars

Ingredients

  • 4 tablespoons butter, 57 grams
  • 5 cups miniature marshmallows, 10 ounces or 283 grams
  • 6 cups Lucky Charms cereal
  • 12 ounces white chocolate or white almond bark, 151 grams

Instructions

  • Line a 9×13 baking sheet with parchment paper. Extend the paper above the pan, and grease it with nonstick cooking spray. and set aside. Reserve about ¼ cup of the marshmallows from the cereal. You will add them to the top of the bars separately.
  • In a large pot, melt the butter over medium heat. Once the butter is melted, add the marshmallows and stir constantly until melted and smooth. Remove from heat.
  • Add Lucky Charms cereal to the marshmallows and stir well until fully incorporated.
  • Pour mixture into the prepared 9×13 pan. Use a greased spoon or spatula to spread the mixture into an even layer. Scatter the remaining marshmallows that you pulled out from the cereal and gently press them into the top of the bars to secure them a bit.
  • Allow the bars to fully cool down and set (about 30 minutes to an hour). Lift the bars out of the pan and cut the bars into even pieces.
  • Melt the chocolate in 30 second increments in the microwave, stirring between every 30 second increment. Continue until fully melted. Dip the bottoms of each bar into the chocolate, making sure to come up the sides of the bars just a bit so you can see it from the sides of the bars.
