Everyone loves Taco Tuesday, but why limit that tasty goodness to one day? My busy family loves this easy nachos recipe just about any day of the week. And what’s even better is the toppings can be modified for the more…choosy…members of your family.

If you’re looking for a fantastic start to the weekend, throw some chicken in your slow-cooker before work and you’ll be eating nachos just minutes after you get home. Don’t have any chicken breasts thawed out? Don’t worry. You can put the frozen ones right in the slow-cooker and head off to work.

One of my favorite treats to enjoy when out to dinner is a big plate of classic nachos. But when restaurants aren’t in the budget, making them at home is just as tasty and very easy on the wallet!

TIP: Skip the store-bought guacamole and see how easy it is to make your own. It’s so worth it!

Easy Nachos Recipe

Delicious nachos made in minutes under the broiler. Perfect easy dinner or weekend snack!
Prep: 10 minutes
Cook: 2 minutes
Total: 12 minutes
Yield: 6 servings

Ingredients 

  • 1 lb Chicken Breast, cooked and diced
  • 12 oz Salsa
  • 13 oz Tortilla Chips
  • 15 oz Black Beans, one can, drained and rinsed
  • 2 cups Cheese, Mexican Blend or Cheddar
  • 2 Avocados, diced
  • 8 tbsp Sour Cream
  • 8 tbsp Black Olives, sliced
  • Garlic Powder, to taste
  • Salt and Pepper, to taste

Instructions 

  • Put Chicken Breasts and Salsa in a slow cooker (on low if you're gone all day or for 6 hours if you have some flexibility)
  • Preheat Broiler
  • Shred cooked chicken
  • Layer – Tortilla chips, black beans, chicken and cheese
  • Put under broiler for about 5 minutes (until cheese is melted and chips are slightly browned)
  • Top with more salsa, guacamole, sour cream and black olives!

For Guacamole:

  • Mash 2 Avocados with garlic powder, salt and pepper to taste. Add a little lemon juice if desired.
