Easy Meatball Subs

Sometimes a recipe is so easy it almost doesn’t count. Maybe that’s the case with these easy meatball subs, but they are so good I want to remind you that dinner doesn’t have to be complicated to be delicious.

This is a fantastic meal for busy days or RV travel. Serve them to a crowd or for lunch on an unexpected snow day.

Quick and Easy Meatball Subs

For the full ingredients list and detailed instructions, refer to the recipe card below. Here are the main steps.

First, add frozen meatballs to a slow cooker.

Cover with marinara sauce and stir well until meatballs are coated.

Cook on low until done. This takes about 4 hours.

You can fill your hoagie rolls whenever you’re ready to eat, but we like to toast ours in the air fryer.

Either way, slice into the roll almost but not all the way through and fill with meatballs. Add sliced cheese, parmesan, and parsley or other toppings if desired.

Enjoy alone or with a side salad. We love using the slow cooker when traveling in our RV because there is very little mess or clean-up.

The fact that the ingredients are frozen or shelf-stable is a huge plus when packing groceries in our RV.

Quick and Easy Meatball Subs

Delicious meatball subs made in the slow cooker are the perfect no-fuss dinner. Great for RV cooking too!
Prep: 5 minutes
Cook: 4 hours
Total: 4 hours 5 minutes
Yield: 6 servings

Ingredients 

  • 45 oz Spaghetti sauce
  • 26 oz Beef meatballs
  • 1 pkg Hoagie rolls, 6 count package
  • 8 oz Mozzarella cheese, or provalone (sliced)
  • Grated parmesan cheese, to taste
  • 1 Tbsp Fresh parsley, (optional)

Instructions 

  • Pour frozen meatballs into the slow cooker. Pour in spaghetti sauce and stir well.
  • Place slow cooker on high for 2 hours or low for 4 hours. Stir every so often to make sure the sauce isn’t burning to the sides of the pot.
  • Cut the hoagie roll and add cheese then place meatballs and sauce onto the roll. Serve topped with parsley which is optional.

Notes

Store leftover meatballs in an airtight container and refrigerate for up to 5 days.
