Make this hamburger and rice casserole when you need an easy weeknight dinner. This dish is made with simple ingredients and pairs well with veggies or a side salad.

I love this casserole because I have a child who doesn’t like cheese, which is the main ingredient for many casseroles. But not this one! This hamburger and rice casserole is full of flavor without the cheese, and that’s exactly what we need around here.

For another option, make this easy lasagna soup and offer cheese as a topping for whoever wants it.

How to Make Hamburger and Rice Casserole

Start by preheating the oven and dicing the onion and garlic. You can also use minced garlic if you have it.

Brown the ground beef with onion and garlic. Drain off grease when cooked.

Add soup, broth, and water to the dish and stir to combine.

Cover the baking dish with foil and bake. Uncover about halfway through.

Remove the casserole from the oven and fluff it with a fork. Garnish with parsley or green onions, and serve with your favorite side. Enjoy!

Hamburger and Rice Casserole

Hamburger and rice casserole uses beef, rice, veggies, broth and seasonings to create a filling and simple dinner. Serve with veggies or salad.
Prep: 10 minutes
Cook: 5 minutes
Total: 1 hour 15 minutes
Yield: 8 servings

Ingredients 

  • 1 tbsp olive oil
  • 1 ½ pounds ground beef, I used 90% lean
  • ½ sweet onion, diced
  • 3 garlic cloves, minced
  • 2 ½ cups Jasmine rice, or other long-grain white rice, uncooked
  • 21 oz French Onion soup, About two 10.5 ounce cans
  • 21 oz beef broth, About two 10.5 ounce cans
  • cup water
  • ¾ cup unsalted butter, about 1 ½ stick, sliced
  • Fresh chopped parsley or green onions for garnish, optional to taste

Instructions 

  • Preheat the oven to 425°F and lightly grease a 9×13 casserole dish with cooking spray. Set aside.
  • In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Once heated, add the ground beef, onions, and garlic. Break the ground beef apart into smaller crumbles. Saute until the beef is cooked through and the onions start to soften, about 5-7 minutes. Drain any excess grease/fat if needed.
  • In the prepared casserole dish, add the ground beef, uncooked rice, French onion soup, beef broth, and water. Stir to combine.
  • Top with slices of butter. Cover with foil and bake in preheated oven for 30 minutes.
  • After 30 minutes, remove the foil and bake for an additional 30 minutes, or until the rice is cooked through.
  • Once it has finished baking, fluff the rice with a fork and then garnish with fresh chopped parsley or green onions. Enjoy!

Notes

Allow the food to cool completely before storing. Store leftovers in an airtight container in the refrigerator for up to 3 days. You can reheat in the microwave or bake in the oven at 350 F until heated through.
