What makes something a Bellini?

Similar to a mimosa, a Bellini cocktail is fruit mixed with something bubbly like champagne or prosecco. However, a puree is used rather than juice so the base is a little thicker and more luxurious.

The drink originated in the early 1900s in Italy, because of course it did. According to a quick Wikipedia search, the creator “named the drink the Bellini because its unique pink color reminded him of the toga of a saint in a painting by 15th-century Venetian artist Giovanni Bellini.”

🍑 Ingredients

For this simple bellini cocktail recipe, we just need 2 basic ingredients.

A champagne flute or other tall narrow glass is also recommended for best results if you have one. This is to preserve the carbonation in the Prosecco as long as possible.

You will need:

  • 2 cups fresh or frozen (and thawed) peaches
  • One bottle prosecco, chilled (I like La Marca)
  • Fresh peach slices for garnish

🔄 Variations

This versatile drink can also be made with other fruit purees. Try blackberry, raspberry or mango to start.

You could also make a blend of your favorite flavors.

And if you don’t have fresh fruit, feel free to purchase bottled puree instead.

📷 How to Make a Peach Bellini

To make peach puree, add peaches to your blender and blend for 60 seconds, until pureed. If your blender has a puree setting, it will work perfectly.

For best results, chill peach puree for 2-3 hours before serving. You only need about 2 oz of puree per drink but I recommend blending about 2 cups of peaches at a time.

Add 2 ounces of peach puree to a champagne flute.

Top with 4 ounces of your favorite prosecco or champagne.

What kind of Prosecco is best in a Bellini?

My favorite Prosecco is La Marca, which can be found easily in most stores. You can also use your favorite champagne or any sparkling wine that is unflavored.

Equipment

  • 1 Blender

Ingredients 

  • 2 oz peaches, If frozen, thaw to puree then allow to refreeze. If fresh, allow time to freeze after blending.
  • 4 oz prosecco, chilled (I prefer Lamarca)
  • 2 peach slices, fresh, for garnish

Instructions 

  • To make peach puree, add about 2 cups of peaches to your blender, and blend for 60 seconds, until pureed. ** For best results, chill peach puree for 2-3 hours before serving.
  • Add 2 oz of peach puree to a champagne flute.
  • Top with 4 oz prosecco
  • Garnish with fresh peach slices

Notes

I recommend pureeing about 2 cups of peaches at a time and freeze in an airtight container. Scoop out and use as needed.
