Tips for Baking Strawberry Quick Bread

I have made this quick strawberry bread a few times and the trick is making sure the strawberries don’t get too juicy.

This is why I prefer baking with fresh strawberries, though you could certainly use frozen fruit too! I would just watch the liquid.

You’ll want to chop the fruit into bite-size pieces but be sure not to crush them too much.

It also helps to shake the fresh fruit with a little bit of flour before adding them to the batter.

Once your batter is mixed up, it’s time to bake in your favorite loaf pan!

TIP: Remember to adjust the oven temperature down by about 25 degrees if using a glass pan. This will allow more even cooking without over-baking the top and sides.

Fresh Strawberry Bread

Yummy strawberry bread is sweet and satisfying! Great for a weekend brunch or afternoon snack.
Prep: 10 minutes
Cook: 1 hour
Total: 1 hour 10 minutes
Yield: 16

Ingredients 

  • 2 cups fresh strawberries, lightly crushed and dusted with flour
  • 2 cups sugar
  • 3 eggs
  • 1 cup vegetable oil
  • 1 Tbsp Lemon Extract
  • 1 tsp salt
  • 2 cups flour
  • 1 cup quick oats
  • 1 Tbsp cinnamon
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder

Instructions 

  • Beat together eggs and sugar
  • add oil and lemon extract
  • Mix in flour, oats, cinnamon, soda, salt, and baking powder.
  • Fold in strawberries
  • Mix gently until just combined
  • Pour in two loaf pans (greased and dusted with flour)
  • Bake at 350 for one hour (or 325 if using glass pans)
  • Add time until toothpick in center comes out clean
